Allergic to Grass Fed Beef?

Is it the cow?

I want to start telling you a little more about my healing journey as of lately, because we learn from each other right? I stopped eating 100% grass fed beef a few weeks ago because I started to get REALLY tired after eating it! I don’t think I am allergic to the beef itself or got a tick that made me allergic to it. I actually think maybe the grass the cows were eating was cross reacting with my grass allergies, making me allergic to grass fed beef. Is this crazy? Now don’t jump to conclusions just yet…let me explain myself.

Is it what the animal eats?

In the past, I have tried chicken, turkey, and eggs. They were the happiest and healthiest little chickens that I bought from a local farmer. Though, I cannot eat them without having a reaction because they eat soy and corn. Even the ones that ate barley and grains (soy free), make my body mad. This was because I am sensitive to the soy/corn/grains they were eating. These grains are a protein source for the chickens so the chicken’s protein structure would have some of the same proteins as the food they eat. It is possible to be allergic to the pollen and or proteins in grass as well. So why wouldn’t that apply to cows and what they are eating.

My reaction

This is the reaction I got when I ate the chicken or eggs. Then in June (grass season), I started to get this same reaction. At first I did not now that I was feeling so crummy. I correlated it to die-off from starting the GAPS diet. I would get SUPER sleepy after eating, which is the opposite of what good food is suppose to do to you! My neck would come out of alignment (which means I had to go to my chiropractor often). My sinuses got stuffed up and my eczema flared up so badly, my face look like it was painted with little red dots!! Ahh, obviously my body was trying to talk to me.

I’m allergic to grass

I am severly sensitve to grass! Here in Minnesota, early June is tough for me because all the grass pollen is everywhere! When I even lay in the grass I will break out in hives. If the cows were eating that grass (prime time for grass feeding), then it is possible my body was reacting to the grass the cows ate. The cows I was getting meat from were fed 100% grass, no corn or soy for sure! I did not have a problem in the fall or winter with beef, so that is why I think it is just seasonal. I was temporarily allergic to grass fed beef!

Cross Pollination

I have to monitor the vegetables I eat in certain seasons as well. This way of eating is just temporary while my gut is so sensitive and my outdoor allergies are still extremely strong (obviously my gut needs a lot more healing).  Some vegetables and fruits cross pollinate with outdoor allergies. During birch tree season I cannot eat celery and peaches and during Ragweed season I have to stay away from melons and cucumbers. If I eat these foods I get really tired, like I did when I ate the 100% grass fed beef during grass season. I am ok with eating these veggies and fruits any other time of the year though. Sadly this means I cannot always eat in season, but staying away from cross pollinating fruits and veggies definitely makes me feel best right now.

Did I overeat beef?

Was I allergic to grass fed beef because I over ate it? I have also heard that you can overeat a food and make yourself allergic to it. Well, really I was not even eating beef everyday in the winter or fall, so I was definitely not overeating it. Anyways, remember the Masai Tribe in Africa? They only ate meat from the same animal almost every day.

So what did I eat?

Well As many of you know, on the GAPS diet, beef is a staple. While I was temporarily allergic to grass fed beef, I switched to fish as my protein staple. That meant lots of sardines, salmon, lake fish, and fish broth (It is not my favorite, but I will choke it down if I have too!).

What about the mercury!

Yes this scared me at first too, when I found out that I could only eat fish as my protein! I made sure to eat the fish that has the lowest mercury. Fresh (not canned) sardines were a staple. I ate the whole thing, head and all, except the bones. The wild salmon I was getting, was from very clean waters. Fresh water fish from a clean lake is pretty clean too.

I made sure to cleanse my body with fresh cilantro and organic chlorella to rid of any excess mercury that did enter my system. I also went in my sauna almost everyday to make sure my body was detoxing efficiently. I cannot say, I was crazy about this change, but sometimes we just have to listen to our bodies! It only lasted a few weeks, but I can say I am glad I stayed away from beef and ate only fish! My body would have been miserable if I was to eat 100% grass fed beef during my grass allergy season.

Can I eat grass fed beef now?

I sure can. Grass fed beef, liver, heart, and bone broth have become regulars in my diet once again! Now that peak grass season is over, I have no problem eating grass fed beef. Grass fed beef and liver makes me feel very energized, the way it was designed to 🙂 I am also going to try 100% grass fed buffalo soon, so I will tell you how that goes!

My allergies have gotten better

I still have a LOT of food sensitivities, but my environmental allergies are soo much better! After I switched from the typical allergy meds I went to “natural allergy supplements” like nettles, quercetin, and sublingual allergy drops (I had to stop taking these because they were made in glycerin). These were really only covering up the symptoms still.

My tiredness, stuffiness, and rashes were still bad on the natural allergy supplements. I used to be miserable for at least a whole month or two in the spring and the fall. I used to say I was only healthy during July, because of the spring and fall allergies and the dust/lack of sun (vitamin d) in the winter made me always sick.

I am happy to report that after 10 months on GAPS (I started last October) I only have a little allergy response to my environmental allergies. I still wake up slightly tired some days and feel crummy, but not nearly as bad as it used to be. I would have been in bed for days. I now just do my Neti pot 3 times a day and shower after I am outside for a long time.

The GAPS diet is the answer!

My grass allergies were obviously bad enough that I reacted to grass fed beef, but maybe next June I will be able to eat grass fed beef and liver without it cross reacting to my grass allergies. Environmental allergies are a problem for people because they need to heal their gutGAPS is the answer!

Everyone’s body is different

Remember, these are my thoughts about why I may have been temporarily allergic to grass fed beef. Also, this is my body and I am just sharing with you what I have experienced. Your body is completely different, but if you are having a reaction to 100% grass fed beef, then maybe this is a possibility.

Kiwi Fruit Leather

A childhood favorite, Kiwi fruit leathers! Who knew that you could make a kiwi fruit leather!? If you love kiwi, this recipe will be your new best friend!

My kiwi fruit leather story

Now, I never actually had a plain kiwi fruit leather, but I used to get strawberry kiwi. When my mom used to take us on all her errands (we were not old enough to stay home alone) she took us to our specialty coop store so we could pick a “treat”. Usually strawberry kiwi fruit leathers were my favorite!

I tried to make strawberry kiwi, but, lets just say, the color was unappetizing. I would rather have a plain kiwi fruit leather instead. I have been working on the consistency of this recipe, and I finally got the final approval from my little food blog critic (my younger sister!) These are her favorite snack as of these days!

What should you know…

I have been on a fruit leather roll in the past few months, while the summer fruit has been so fresh and cheap. I can get a box of kiwi at Costco for pretty inexpensive this time of year. I do not get organic because I peel the kiwi and it is not high on the pesticide list. Feel free to use organic if you feel more comfortable though.

The kiwi fruit leather has seeds in it, but the consistency of the kiwi fruit leather is so chewy, you wont even know they are in there. Don’t strain the pulp and seeds out of the leather, because then you take out good nutrients and it becomes too watery. Also the honey is a MUST! I learned that the kiwi fruit leather will be hard, crunchy, and thin if you don’t add the right amount of honey. So please don’t over cook!

Kiwi fruit leather nutrition

Kiwi’s are high in vitamin C…..way more than the orange! This vitamin C powerhouse will boost your immune system like no other fruit! They also contain a lot of potassium, so eat up!

Just don’t eat too many of them, because I once did and boy did my tongue sting! Something in the kiwi’s makes your mouth tingle, when you eat too many. I guess it is your body saying..no more please!

These are GAPS friendly as well 🙂

How do you dehydrate?

Personally I use an Excalibur dehydrator, which I have running almost every other day! I use their ParaFlexx ULTRA Silicone Non-Stick Drying Sheet. I have tried to order a brand like this one on amazon, and I could not even finish opening it, because it smelled like strong chemicals. No way was I putting any food on that toxic thing. I find that the Excalibur silicone sheet does not smell at all, and it is easy to clean up.

I would NOT suggest any of the other nonstick dehydrator sheets that contain the toxic chemical teflon of them! I tried parchment paper, and it works, but it tends to crinkle up in the dehydrator.

You don’t need a dehydrator to make fruit roll ups though. An oven will work too. I will post oven directions below 🙂

Tips and Tricks:

This is an important section! Make sure when you pour your kiwi puree onto the dehydrator sheet that you pour the whole thing at once. It will spread out easily into a big circle. Keep the edges just as thick as the middle, so there is even drying. Try to keep it from spilling over the edges if you are using a dehydrator sheet. Carefully use a spatula to square out the edges to create a square. This is the tricky part…transfer your tray to the dehydrator without spilling the kiwi puree!

Once you think the kiwi fruit leather is done, take it out of the oven or dehydrator and let it cool down for a few minutes. When it is still hot, it will seem stickier then it really is. After it cools down, test to see if it is TACKY, your finger should not come out with any fruit goo on it, but it should a little sticky/tacky. If it is not done, you can always put it back in. Though you cannot fix a “too dry” fruit leather! Stay on the safe side and just keep checking it!

 

INGREDIENTS:

5 kiwis

3-4 TBS of  raw honey (depending how sweet you like it)

1. Wash (I don’t like to be touching pesticides) and peel your kiwi’s.

2. Chop the kiwi’s in rough pieces.

3. Puree your kiwi’s in a blender (I use my Vitamix).

4. Add your honey and blend.

6. Pour your mixture onto a silicone dehydrator sheet or parchment paper. (Read tips and tricks above)  **oven directions below

7. Dehydrate for 5-8 hours on 135 degrees. Start to check to see if it is Tacky after 5 hours. (remember you can always put it back in).

8. Remove form dehydrator when the kiwi fruit leather is still TACKY, but not sticky. It should not be dry either.

9. Let the kiwi fruit leather cool down to room temp. Cut the fruit leather in long strips or in a square (however you prefer).

10. Wrap your fruit leather in unbleached parchment paper. I lay the strip of kiwi fruit leather on the parchment paper while leaving 2 inches of paper on each side. I roll it up and staple one side (I am allergic to tape because of the latex so I use staples, though I find it is very easy to unroll this way). Cut off any extra parchment paper to make it look neat.

11. Store in a ball jar for up to 4-6 weeks at room temperature. You can keep them in the fridge for a long time.

** oven directions:

(An oven takes longer for your kiwi fruit leather to dehydrate because it does not have a built-in fan like the dehydrator. Just be patient.)

1. Line a baking sheet with unbleached parchment paper or a silaplat baking sheet.

2. Pour your mixture onto the parchment paper (read tips and tricks above).

3. Dehydrate in oven at 140-160 degrees (depending how low your oven can go).

4. Start to check to see if it is done after 5 hours. Remember if should be TACKY!

Salmon Jerky

Salmon Jerky to the rescue!

Hands down, this Salmon Jerky steels the spotlight from the all famous beef jerky. Since salmon is honestly my favorite food, I like to think of all sorts of ways to prepare it! Salmon Jerky is a hard one to resist. It is portable GAPS/SCD/paleo food! What more could you ask for?

Salmon Jerky inspiration:

Salmon bellies (the small oily fin on the salmon fillet) are my favorite part of the salmon. I love them becsue they are buttery and crisp..mmmm. It literally makes my mouth water just thinking about these little bellies. (I buy them from my local fisherman). I wanted a unique way to take regular salmon and make it crunchy, like the bellies. I brainstormed, though it didn’t take long to be suddenly inspired to make Salmon Jerky! This Salmon Jerky reminds me slightly of the salmon bellies. They are not super oily, but the crispiness is half the fun!

Salmon Jerky nutriton:

The health benefits of salmon are endless. Everyone has heard all about the good omega 3’s and all, but just incase you have not, here is a rundown:

  • High amounts of omega 3 (Helps blood flow,brain function, and clear skin)
  • Vitamin D (Sunshine in food form!)
  • B12 (Promotes good nerve function)
  • Selenium (Helps combat stress and supports thyroid)
  • High in Protein (supports healthy body growth)

Wild vs. Farmed?

Oh one last thing…make sure you salmon is WILD!! This is a must, or else you might as well not even eat that antibiotic pumped, pink dyed, stuffy salmon. Ewww! Do your body and environment a favor and buy the wild stuff. It might be more expensive, but that is because the farmed salmon is ridiculously cheap. July/August is the best time to pick up a nice big fillet of wild salmon and either eat it, freeze it, or jerky-it.

Salmon Jerky is my favorite snack food

Yes you read that right. In my opinion Salmon Jerky is better then fruit, crispy nuts, veggies, butter…in my books it is a top priority food. Now don’t get me wrong, all of those options are good, but wild salmon keeps a special place in my heart..and stomach!

It contains no sugar, no dairy, no wheat, no soy, no gluten, no preservatives. Salmon jerky can accommodate most all diets including the GAPS/paleo/SCD/anti-candida/low carb/ traditional food. It is pretty much a universal healthy snack. You are getting the purest real deal right here!

This is definitely not the kind of stuff you get out of the bag, coated in nasty MSG and loads of salt. You will feel good and energized after eating Salmon Jerky. It is a pure good protein source, with just enough fat to keep you satisfied.

Snack ideas:

Salmon Jerky doesn’t just have to be eaten plain. Feel free to get creative. The texture reminds me of crumbled bacon, so it would make a great flip flop for bacon, crumbled on a salad! Use can also use it to dip into salsa, guacamole, sour cream..etc… Crumble the salmon jerky and put into quiche or egg muffins. They would also be great mixed into a savory salmon dip! Let your salmon imagination swim WILD!

Tips and Tricks

Be sure to use fresh quality salmon, You can either buy it frozen or fresh. (If you buy it frozen make sure it does not contain preservatives in it.) It is helpful to freeze the salmon fillet for 30 min before you slice it, to get nice even cuts. Make sure to use real sea salt too! A sharp knife (i use this one) is a must, to cut the pieces of salmon away from the skin nicely. Make sure to buy a middle piece to get nice even thickness throughout the fish. Ok, I think that is all I need to tel you… I will stop blabbing, so you can learn how to make this AMAZING salmon Jerky!

It also helps to have a dehydrator, because it turns out perfect each time! This is the dehydrator we have.

INGREDIENTS:

Brine:

½ cup raw apple cider vinegar

1 T organic lemon juice

2 T coconut aminos

1 T paprika

½ T onion powder

½ T garlic powder

1 ½ tsp sea salt

1 cup of filtered water

 

14 oz wild salmon (partly frozen)

 

DIRECTIONS:

1. Freeze your beautiful piece of salmon for 30 min until it is slightly firm. (This makes it easier to cut evenly)

2. Use a sharp knife to cut ¼ inch pieces of salmon flesh. Once I cut through to the skin, I scrape the knife against the skin, to “peel” the salmon flesh away from the skin. Do this until all the salmon flesh is removed from the skin.

 * SAVE the SKIN! Crisp it up the oven at 350 until it is brown and crispy..yum (one of my favorite parts about making salmon jerky!!)

3. In a glass bowl or container, mix all your brine ingredients together.

4. Add the salmon pieces into the bowl of brine and let sit for 12 hours in the fridge, covered.

5. Remove from fridge and lay out bleach free paper towels on your counter. (I use 2-3 on top of each other). Carefully take the brined salmon pieces out of the brine and lay onto the paper towels to soak up any dripping liquid.

* The lemon juice and apple cider vinegar almost “cook” the salmon so it turnes into a harder texture, be careful with it because it is more brittle like this.

6. Transfer the salmon pieces onto a dehydrator tray. ** (oven directions below)

7. Dehydrate for 3-4 hours at 145 degrees Fahrenheit. You know when it is done when it turns a darker reddish brown. It should be dry and chewy, not crunchy! When you bend it, it should not snap in half.

8. Store salmon jerky in a ball jar for many months. Enjoy the health benefits of salmon anywhere, even when it is not in season!

 **Oven directions:

  1. Preheat oven to 160.
  2. Rub or Spray your oven racks with cooking spray (I recommend lard or coconut oil).
  3. Place salmon pieces directly over the racks.
  4. Dehydrate for 3-4 hours.

Coconut Chip Giveaway!

Coconut chips…

Well, first off Let’s Do it Organic calls them coconut flakes. I like to call them coconut chips because I always call the small shredded coconut pieces (flakes). Really who cares what you call them, all that matters is that you can get some to make this recipe! If you cannot tell, I love coconut! Can I have Coconut chips on GAPS?

Yes, after intro you can add in coconut chips. Everyone is different with timing and adding in new foods on GAPS. I introduce food so slow, and I actually have had to back away from coconut right now ( I still eat coconut oil). I do miss it, but I have to be patient with my body.

Don’t even compare yourself with anyone else on GAPS, you are unique! If you have never had coconut on GAPS then try making homemade coconut milk first (it is easier on your stomach). If you are ok with the milk, then try the chips (start with a few at a time..really they are so good, but only try a few!) They do contain a fair about of fiber, and I know this can cause problems for people on GAPS.

Are coconut chips good for you?

Coconut chips are just like coconut shreds, just in a bigger form. I use coconut shreds/flakes to make homemade coconut milk and coconut milk yogurt. Pretty much coconut flour is the same thing, just more finely shredded. Coconut comes in many different form as you see.

Low carb

Coconut chips are low in carbohydrates and high in fiber. Now you should not be scared of carbohydrates, though lots of times people on GAPS have a hard time digesting certain carbs. That is why coconut is such a life saver on the GAPS diet.

Saturated fat

Coconut chips are filled with the good fat…yup Saturated fat is the best! There looks like there is not much protein in coconut flakes, but really that label is for 3 TBS , and who can just eat 3 TBS of coconut chips? Coconut has just enough protein to keep your body running. I always say that coconut seems so complete, because it is so substantial and has great ratios.

Minerals

Since coconuts grow by the sea, they are filled with lots of good minerals for your body. Most people are deficient in minerals these days, so coconut is even more important.

Can coconut help my illness?

Native Pacific Islanders considered coconut to be a “cure for all illnesses”. Now I cannot say that it will cure you, but coconut does have a lot of benefits for your body. It helps..

  • Protect the immune system.
  • Prevent tooth decay.
  • Improves digestion and assimilation of vitamins and minerals.
  • Improve magnesium absorption! (so this is a good complement to homemade magnesium oil).
  • Kill viruses and bacteria.
  • Support thyroid function.
  • Skin, nail, and hair growth (it’s those minerals!).
  • Weight loss.
Now don’t take my word on all of this..everyone’s body is different. To see what coconut can do for your body, you will have to just try it yourself!

 What do Coconut chips taste like?

Lets Do it Organic coconut chips have a rich nutty flavor. They are not overly coconutty when you eat them plain, but if you brown them in the oven like in this recipe, then the coconut flavor because more intense and nuttier! So good.

They are slightly crispy straight out of the bag, but if you really want a crunch, you have to brown them in the oven for like 2 minutes (they cook really fast!!)

They will leave you feeling light, but satisfied. Don’t you love foods like that? That is because coconut is one of natures perfect food. Eat up!

Give your child health that lasts a lifetime!

My childhood was rough. Yep, that sums it up well.

Bye bye good bugs

I suffered from many ear infections that left me and my mom in tears. I was simply miserable from the deep throbbing pain and my poor mom just didn’t know what to do. Like any parent, my mom took me to the doctor and he simply prescribed me a round of antibiotics. I think I went on 4 round of antibiotics in 1 year. My poor gut flora was simply wiped out, both the bad and the good. My mom knew enough to supplement with yogurt and baby probiotics, though what I know now, this was not enough. My good bacteria bugs were flushed right out of me.

What went wrong ?

I was born at home and breastfeed until I was a few years old, but why did I end up with digestive issues, allergies, and sensitivities 15 years later? Sure breast-feeding did a lot, but there were many things that were not done during my first year that could have helped. My mom did the best she could at that time, and she used all the resources that were available to her. Of course, I am so thankful for what she did do. I bet she would have used Nourished Baby if it was available when I was born. 🙂

I had a temper!

Around the time of my bad ear infections, I suffered from eczema and temper issues. I would cry and scream because things were simply uncomfortable. Most likely I was suffering from food allergies. Food allergies can be nasty and they can take a sweet nice person and turn them into a monster…this was my case.

My health goes haywire

Nobody knew what was wrong with me! It was frustrating for me but also for my parents. Things started to calm down for a few years, though once I turned 12, my health plummeted. I got my braces on around that time and I think the metal really caused a big immune response and weakened my immune system. My allergies became very strong to many foods and environmental things.

My stomach would hurt day and night. I also started to get cravings for anything dairy, especially yogurt. Not knowing, I simply gave into my cravings.  Ahh..This was really the worst thing I could have done! I was probably suffering from candida, after never fully restoring my gut flora as a baby. My eczema would cover my face until it was bright red. My health just kept draining away. Can’t you see all my symptoms were because my gut was imbalanced?

Loosing weight and malnourished

I finally gained a little wisdom and stopped eating yogurt and dairy. Then I took out the wheat, sugar, grains, and my stomach slowly started to feel better. Though, every time I slipped, my stomach would want to explode. The bad bugs were still in control of my gut. I started to lose a lot of weight and I could not keep it on, no matter what I did. My stomach was swollen and sore like an open wound. My nutrients were not being absorbed, which left me depleted and tired.

Me right before my wisdom teeth surgery….my immune system was about to be attacked!

I got my wisdom teeth out and surprise surprise..I got a bad infection! My whole body reacted badly to the infection, but what really wiped me out was that antibiotic again! This was definitely a wake up call. I started to research and read lots. It was not long until I started the GAPS diet. A year later I was diagnosed with an autoimmune disorder (hashimotos), and a severe gluten sensitivity (so much so, if I breath in one crumb it will give me a reaction).

Why is my body so messed up?

So here I am today, still trying to figure my body out. I can’t help but ask myself day after day, what could I have done differently?? I would not have changed the past even if I could have, because it has taught me so much and brought me a passion I never knew I had.

Every child should experience what life really has to offer.

But deep down I still wonder why I am like this?

After reading Heather’s book, Nourished Baby, I now have some answers.

Nourished Baby made me cry

Seriously, I almost cried reading this book..and I don’t cry easily! It just makes me remember all those frustrating years where I had no clue what was wrong with my body. Though this book had the information that I needed. I don’t read this book and criticize my mom or myself about what we did wrong when I was a baby. I look through this book and realize how much potential my children and my siblings’ children can have. Without me having to go through this, I would have never started this blog and I would have never got to read this book by Heather! Thank youNourished Baby for nourishing my brain with amazing information!

Best book ever!

Someday this book will be on every mothers bookshelf, because it really has the potential to keep your children healthy for life! The information in Nourished Baby is truly priceless! I learned so much about my body by just reading the first few pages.

If you want to prevent your children from going though the roller coaster of health (like me), then please do them a favor and Nourished Baby!! Is this book just for mothers?

No way!! This book seems like it is geared towards mothers, though I got so much out of it! Everyone was a baby at one time in their life and you can learn how the actual birth experience affects you today as an adult! Isn’t that crazy?

This information is helpful to pass onto friends who you don’t think will read a book. It would also be a fabulous baby gift..if the baby could talk it would definitely say it wants to be healthy when it is grown up. What child wants to spend days in doctor offices when all their friends are at the park. Every person deserves to live their life to the fullest!

What else will I learn in this book?

I loved to tie my own connections with the information Heather as to share. I am sure you will be able to do the same 🙂 She talks about how…

  • eczema and allergies can be prevented if your establish good gut bacteria in your baby or child.
  • you can prevent your child from getting braces. (I wish I knew that information sooner..)

After reading this, I could not believe how much a baby’s first experiences from being born to taking the first bite of food really affects them later in life. Heather has written an amazing book and I am sure I will be using this information when I have my own children someday! Actually I might only need just this one book because it covers everything!!
