What have I learned from these Wellness books?

I do a lot of research. I love it. I crave information that I can relate and use in my own life. I also eat up any information that can help my family and friends and my readers (you!)

Research takes a lot of time. Scouring the internet and deciding if you should trust the author or not.  But when I find a good e-book (and I trust the author) I know that I will get good information and recipes that has been thoroughly tested and well researched.

The is why I cant say enough great things about the Wellness e-book bundle!

Let me go through some of the books I have learned great lessons or techniques from that I use in my everyday life.

 

Grain Free Meal Plan cookbook

When I first started the GAPS diet I was stumped. How was I going to eat this way for months or even years? I did research and picked out a few recipes but nothing was going to prepare me for having to be on GAPS for over 12 months. This is when cook books come in handy, especially this one.

Cara from Health Home and Happiness is a GAPS expert! She has done GAPS for her family and they have seem tremendous results. I knew that her recipes were trusted and tested and they were exactly what I needed to keep my imagination and cooking creations fueled. She even has a Freezer cooking guide for grain free meals too (this is included in the bundle as well!)

Dont even get me started on the photography and beyond delicious (but grain free) recipes! I would just buy this book just to drool over the pictures 🙂

Carol from Ditch the Wheat is a genius! -a sweet (grain free) one too!

If I had a party or family get together and “needed” to bring a desert, this is the cook book I would choose to go to. Everything is a masterpiece and when you are under “that” kind of pressure, there is no messing up! Even if people didn’t eat “grain-free” I would serve these deserts anyway.

 

Nourished Baby

LOVE. LOVE. LOVE. this book!

Nope I don’t have a baby of my own or even one in my family. That did not stop me from devouring every page of this book.

Heather from the Mommypotamus is genuinely nice and super smart! She knows her stuff on babies, birthing, food, nutrition and beyond. She advocates bone marrow, fish eggs, liver. She certainly wont force it down yours or your baby’s throat but instead she will give you guidelines and even recipes to guide you.

She talks about a baby’s gut flora and how important the birth process really is. She taught me things about my own life, and how my health was affected by the choices made when I was a baby.

EAT of HEAT!

This is becoming a very popular book in the blog world, and for a good reason. Matt Stone from 180degreehealth is on to something.

Raise your hands if you suffer form cold fingers and feet! Me!..and let me tell you its no fun when its  below freezing here in the Minnesota winter wonderland. 🙂

Who had a low body temperature? Me. Lets say I had a fever a few days ago and I was burning up. My temp got to 97..

What has clear pee and drinks lots and lots of water- the more the better- (hey that is what “they say” right)? Wrong. I used to drink more then 100 oz of water a day. Yep I peed a lot.

Who here has terrible sleep?? Whether it has to do with blood sugar, hormones, or simple just getting up to pee (me), this is not “optimal health”. Im not going to say “normal” because what is normal anyways?!

 

What to know the good news? After I simply cut down on my water intake; I sleep better, my fingers and toes are warm and Im craving less water. It is possible to be over hydrated. I learned too many lesson to count in this book!

 

Something to be excited about!

The good news is that you don’t have to pick just one of these books but you get all of these (I just mentioned) plus the whole package of a total of 33 e-books. This calls for a-little excitement. How about a 30 second dance party…to get your blood moving of course 🙂

Snowflake Peppermint Fudge (GAPS)

Hey Gutsy Readers!

Peppermint + Chocolate + Coconut = Snowflake Peppermint Fudge!

 

 

NAET updates

I will keep popping in and out until my health is a little more under control. Many of you know that I started NAET about a month ago. It has been quite a journey so far! You can follow my updates on Facebook for now. I’m detoxing a lot and my body is going though major changes so be patient with me 🙂

Way back when..

In the meantime, I remembered a year ago before I had my blog that I entered a contest on the WellFedHomestead blog (one of my favorites, especially because I was just starting GAPS). I was so excited when I won! I forgot about the recipe until now. I love thinking back that this is how I got started. I was so excited to have one of “my” recipes posted on a blog!!! That experience was so inspiring that how could I resist creating my own blog..

 

Tasty

Minty and festive, this fudge is almost like peppermint chocolate patties, but all combined into one. The extra coconut on top gives it a fun “snowflake” theme. These are fun to make together with siblings or as a family. The hardest part is waiting for them to become solid, but its worth it! Enjoy!

* the “creamed coconut” is actually Coconut butter. I just was not familiar with the term “coconut butter” and the package I used was called “creamed coconut”. Don’t get confused with the cream on top of the coconut milk can-do not use this! . So use this recipe for the creamed coconut (aka. coconut butter).

Rooibos Cream Jello

Remember Lauren from empowered Sustenance? She did a guest post here a while back on going too low carb on the GAPs diet. We have been friends and watched each others blog grow. I think you will be pleased how AMAZING her blog is looking recently. Go check it out here! She has the most unique GAPS friendly-nut free recipes around!

 

 

A Sophisticated Jello

Jello provides plenty of entertainment to eat: jiggling it on the plate, wiggling it with a fork, and slurping it through one’s teeth. While jello obviously has the fun factor, it lacks a certain elegance. It is the kind of dish you enjoy by yourself… not really something you would serve to guests.

Until now! With a few simple ingredients, gelatin turns rooibos tea and coconut milk into a sophisticated treat, perfect as a snack or dessert.

 

 

I tried to further convey the chic-ness of this jello by featuring some refined-looking books into the photos. I figure I can’t go wrong by throwing in a copy of The Complete Works of Shakespeare and a fancy-schmancy poem book!

 

 

What is Rooibos?

Rooibos is my all-time favorite tea. It is made from the redbush plant in Africa and boasts a mild, slightly earthy vanilla flavor. You can also find it under the name red bush, redbush, or African red tea. When buying the tea, check the ingredient list to make sure it contains only redbush leaves, no “natural flavors” or other types of tea leaves.

 

 

Rooibos Cream Jello

 

INGREDIENTS:

2 cups strongly brewed rooibos tea (also called red bush or African red tea), cooled

2 tbs. grassfed gelatin, such as Great Lakes

1 cup additive free coconut milk

1 heaping Tbs. raw honey

 

DIRECTIONS:

1. In a small bowl, combine 1/4 of the cooled tea with the gelatin. This makes the gelatin dissolve without lumps.

2. Let the gelatin mixture sit and heat the remaining tea to a simmer in a saucepan.

3. When it is just barely simmering, whisk in the gelatin mixture and the coconut milk.

4. Let cool slightly, then whisk in the raw honey. Taste and add more honey, if necessary.

5. Pour the mixture into a rimmed dish and refrigerate until set, about 4 hours.

6. To unmold, fill a large pan with very hot water. Place the dish with the jello in the hot water bath so the hot water comes up to the sides (but don’t let the water overflow into the jello!). Hold it in the hot water for about five seconds, until it has loosened from the dish. Don’t keep it in the hot water too long or it will start to melt.

7. Quickly place a plate on top of the dish and invert the jello onto the plate. Cut out with cookie cutters and enjoy!

Eat well and heal!™
